Hello all,

I hope you are enjoying your Organic Super Packs this week, we will have them through Saturday so be sure to pick one up. But aside from that, I was in the kitchen today trying out some old recipes with a new take and I came across one of my all time favorites, Stuffed Peppers. I think stuffed peppers is a great meal and can be used as a comfort food, because it’s one of those foods that just makes you want to rest after eating. My twist on the pepper is using Kiolbassa Chorizo as the main protein. This is my first time using the chorizo and I have to say, it made all the difference! Kiolbassa always has a good sausage and bacon, but I never tried their chorizo. I was amazed.

The first thing I noticed was that it cooks more like ground beef and does not have a greasy texture. The spice content was mild and I feel if you wanted to spice it up that would be at your taste level. Overall it was a great flavor and it added to mix for the pepper. I also made a cilantro lime white rice and black beans. I roasted the bell peppers first for about 15 minutes then after all ingredients were finished, I stuffed the peppers. I did it in layers of rice first, black beans next and chorizo on top finished off with a nice Mexican cheese. So simple and yet so good. The combination of all the layers blended well and made for a delicious meal. The staff was very appreciative of my efforts and that is always a boost to my cooking ego. But I do enjoy making simple meals and trying them out with something new. All in all, it was a good collaboration between Kiolbassa chorizo and River City Produce vegetables.
